This recipe was born in Portugal, when we last time went to visit my family. My granny is not a fan of uncooked eggs, but still I had already fixed in my mind I would make chocolate rosemary mousse for the next day’s dessert. This recipe is super easy, full of taste and quick to prepare, so all the key factors in one. Not bad, ey? I also added some honey caramelized oranges at the top, which fitted very well.

Now, you might ask, and I won’t blame you for that, what’s with the eucalyptus branches? If you think I just yielded to the common fashion among food bloggers of using them as a decoration even though imported from abroad at a very expensive price, the answer is no. Simply put, Portugal has a massive quantity of eucalyptus forests and so one day I thought to stop by on my way home to pick some. These baby leaves are round, but when they grow they become of a more emerald green, long and pointed.

But now, down to the recipe!

Eggless rosemary chocolate mousse

Ingredients
  • 3 tbsp honey
  • 3 tbsp water
  • 1 tbsp Macieira*
  • 1 rosemary twig
  • 200 g of dark chocolate 50%
  • 400 g of heavy cream
Preparation
  1. Bring to simmer the honey, the water, the Macieira and the rosemary twig. Let it simmer for a few minutes. Set it aside and let it cool completely.
  2. Melt the chocolate, remove the rosemary twig from the syrup, add it to the chocolate and mix well.
  3. Whip the cream and fold in the melted chocolate with the help or a spatula.
  4. Pour into small bowl or cups and refrigerate for at least four hours or overnight.
Decoration
  1. Caramelize some orange by simmering orange slices on a pan with some honey and a little bit of spirit if desired (I used Macieira).
Notes
COOK TIME REFERS TO COOLING TIME.
For this recipe I used the common Portuguese spirit named Macieira, but you can easily substitute it with another Cognac or Brandy of your choice, or even leave it out and put one teaspoon more of water.
